Heirloom Tomato & Stone Fruit Salad

September 27, 2016 By Elaine Baker Leave a Comment

This is the second of three posts I’m publishing referencing the 2016 International Food Blogger Conference (IFBC). I received a discounted registration rate in exchange for sharing my experiences at the conference.

Living in Sacramento – “America’s Farm-to-Fork Capital” – has spoiled me. I drive past cornfields and strawberry patches on a daily basis, their presence barely registering because I’ve seen them so many times now. I pause at a stop sign, my mind on the errands I have to run, and idly glance over at the cattle gathered along the roadside fence, so close I can almost touch them. (If Jeff’s in the car he lowers the window and yells “MOOOOO! at them. But I digress.) We dine at restaurants whose chefs skillfully prepare sturgeon raised at a freshwater, sustainable fish ranch a mere mile from my home. I take for granted the ridiculously easy access to fresh, locally-grown fruits and vegetables available year-round at both my grocery store and my favorite farmer’s market.

Smoky Tangy Roasted Almond Spread

August 30, 2016 By Elaine Baker Leave a Comment

This is the first of three posts I’m publishing referencing the 2016 International Food Blogger Conference (IFBC). I received a discounted registration rate in exchange for sharing my experiences at the conference. All opinions expressed are my own.

Roasted Almond Spread

The IFBC came to Sacramento last month, and boy did my city represent! The overarching theme of the conference was an exploration of California’s farming and agricultural industry and the rapid growth of the farm-to-fork movement. One of the highlights of the 4-day conference was the “Taste of Sacramento” culinary fair where 300+ food bloggers, many of them first-time visitors, were treated to an incredible array of bites from some of the area’s best restaurants and food producers. From spicy lamb street tacos to artisan chocolates, from crispy pork belly and fig preserve sliders to olallieberry pie macarons, there was no shortage of amazing food prepared with local ingredients. There were lovely displays of California peaches, pears, endive, figs, olives, walnuts and pistachios, and one of my personal snack faves – almonds – courtesy of Blue Diamond Almonds, which is based on Sacramento and whose almond growers produce over 80% of the world’s almond supply. I sampled their Sriracha and Toasted Coconut flavored almonds and while both were really tasty (especially the Sriracha!), at heart I guess I’m just a plain almond type of girl.

I always have raw natural almonds in the freezer for baking and snacking. In fact, my lifelong affection for almonds began years ago, when I shamelessly used them as date bait. Yep, you read that right. I was a young, single secretary at an industrial R&D facility where my days were spent typing documents for a building full of engineers, mostly men, and most of them much older than me. And God yes, it was as boring and tedious as it sounds. But … there was a small contingent of college graduates, guys my age who would stop by my desk throughout the day to drop off their latest equation-filled report for me to type up for them. I had my eye on one in particular. He was nice looking and funny and I liked him a lot.

Chocolate Banana Bread

February 18, 2016 By Elaine Baker 1 Comment

This is not your momma’s banana bread (no offense). This is not a one-dimensional, too-sweet, gummy loaf whose sole reason for existence is to be the receptacle for beyond-ripe bananas that no one wants to eat in their blackened state. (Okay, maybe a little offense.) Why don’t we show banana bread some love? Let’s use our bananas when they’re just spotted all over with cute brown freckles, before they turn to mush in their skins. Let’s gift them with some fine chocolate, cut their fruity sweetness with a little espresso and crème fraiche, and blanket them with a toasty, nutty, crunchy topping. Sound good? Let’s make Chocolate Banana Bread with Salted Cocoa-Nut Streusel.

Ancho Chicken & White Bean Chili

January 21, 2016 By Elaine Baker Leave a Comment

Ancho Chicken & White Bean Chili made an appearance on our dinner table at least 4 times between Thanksgiving and New Year’s. Or was it 6? I don’t remember exactly. I do know I made it a lot, because this deeply satisfying, mouth-tingling, belly-warming chili helped to break up the parade of rich, heavy food that tends to dominate meal times during the holidays. You know the drill … More cream! More butter! Would you like gravy on that stuffing? Did someone say pie? Here, have a cookie! Ugh. Enough! I want smoke! I want heat! I want this.

Maple Coffee Hazelnut Ice Cream

November 16, 2015 By Elaine Baker 2 Comments

You guys. You know how you go grocery shopping without a list and end up coming home with a 32 oz jug of maple syrup that you were so excited to buy because it was on sale, and then when you get home you open the fridge to put it away and discover an unopened 32 oz jug of maple syrup already living there? That you forgot you had? No? OK maybe it’s just me. Aaanyway, finding myself the proud (and somewhat chagrined) owner of a copious amount of tree-to-jug Grade B liquid gold, I started thinking of ways I could use this unplanned embarrassment of riches. So I could make room in the fridge, not just because I love maple syrup. Which clearly I do.

Grade B maple syrup is heady stuff. I’ve been using it for years for baking and cooking, saving the lighter, oh so elegant Grade A syrup for adorning pancakes and waffles. Grade B is dark, rich and robust, with a depth of flavor that pairs well with a lot of other ingredients.

Like coffee. And hazelnuts. And cream.

Enter Maple Coffee Hazelnut Ice Cream. The upside to my absentmindedness.

Soft & Chewy Ginger Cookies

November 6, 2015 By Elaine Baker 3 Comments

Soft & Chewy Ginger Cookies

I’m gonna make this short and sweet. Do you know there are only 7 weekends until Christmas?

Have you already started making plans? Family get-togethers, holiday shopping, travel?

Do yourself a favor. Before you tackle anything else, make a batch of this cookie dough. You don’t even have to bake it now. Just scoop it out into individual cookies and freeze them. Don’t make them for anyone else. These are just for you.

Soft & Chewy Ginger Cookies

Then, a few weeks from now, when you don’t think you can stand hearing one more note of Christmas music…

When your interactions with your fellow humans leaves you feeling less like Buddy the Elf and more like Scrooge…

When the world has gotten on your. last. nerve.
